Our Colomba

Swollen, well leavened, authentic, even in the shape. When cut, it expresses a full aroma of pastry, yeast, candied fruit, vanilla, which can also be perceived with the naked eye.
The flavor is very precise: exactly what it is, in the common imagination. The interior is a beautiful bright yellow, dotted with tasty candied fruit and the soft, elastic and supple dough is accompanied by perfectly balanced aromas.
It traditionally has the stylized shape of a dove, a symbol of peace according to Christian culture.
Hours and hours of leavening give life to a soft dessert, intensely scented and with a pleasantly persistent flavour.
Conceived by Dino Villani in the 1930s, to exploit the same machinery and the same dough as the Christmas panettone during the Easter period. Since then the Easter dove has spread on the tables of all Italians, and even far beyond the borders of Italy. The original dough, based on flour, butter, eggs, sugar and candied orange peel, with a rich almond glaze, has subsequently taken on various forms and variations.
